Easy-on-the-Cook Chicken Divan
Ingredients
  • 2pkg frozen cut broccoli or 16 oz. fresh spears16-oz.
  • 4cups cubed cooked chickenpurchased or from 4 chicken breasts
  • 2cans condensed cream of chicken soup10 ¾-oz.
  • 1cup mayonnaise
  • 2tsp lemon juice
  • 4oz shredded cheddar cheese or other cheesesuch as smoked provolone, 1 cup
  • 1cup soft breadcrumbs
  • 1/4cup margarine or butter
  • additional fresh herbssuch as oregano and thyme, optional
Instructions
  1. Cook broccoli as directed if frozen.
  2. For fresh, steam approximately 10 minutes. Rinse with cold water to stop cooking; drain.
  3. In small bowl, combine soup, mayo and lemon juice. Add herbs.
  4. Arrange broccoli in 13×9″ greased baking dish.
  5. Layer cooked chicken over broccoli.
  6. Spread soup mixture on top, sprinkle with shredded cheese.
  7. In small bowl mix bread crumbs with butter, sprinkle over top.
  8. Bake in 350F oven 35 minutes or until thoroughly heated.
  9. (If needed can make ahead and refrigerate for 2 days or freeze up to 2 weeks. If frozen, thaw in refrigerator before baking.)
